Have you ever been in that place where you realize around lunch time that you have no idea what you’re going to make for dinner that night? That happened to me one day this week. We were on vacation last week and I still haven’t gotten my pantry and fridge restocked. So, what did I do? I rounded up the things I had and threw them all together in the crock pot.
And you know what? It turned out delicious! That’s why this dish is called Hodgepodge Crock Pot Chicken. The great thing about this recipe is that you can really use just about whatever veggies you have on hand.
Hodgepodge Crock Pot Chicken
1 whole chicken
1 red pepper, sliced
2 stalks celery, chopped
½ onion, sliced
½ cup – ¾ cup baby carrots
2 cloves garlic
¼ tsp. sea salt
¼ tsp. ground cumin
¼ tsp. oregano
Pepper to taste
Directions:
Slice and prepare all veggies and layer in the bottom of the crock pot. Place chicken on top of veggies and sprinkle seasonings all over. Add 1 cup filtered water. Cover and cook in crock pot on high for 4-5 hours or until chicken is cooked through.

Question for Brandy: if you just realized this at lunch does that mean your chicken was frozen? I have never cooked a frozen chicken in the crock pot…does it work?

Great question Nikki! No, the chicken was already thawed. I don’t know that it would get some in a reasonable amount of time if it was frozen. So I guess you do have to have a thawed chicken on hand and then throw in whatever else you have!

Crock pots are an amazing piece of kitchen equipment.
Nikki, I have cooked frozen chickens in the crock pot before, and it works just fine. IF you’re doing that, you should give it more time (obviously), but also, I would wait to put the other stuff in otherwise it will be cooked to flavorless mush by the time the chicken is cooked. Of course, the recipe DOES say to put the goods on the bottom, but recipes are more like guidelines anyway, right? Depending on the size of the chicken and setting of the crockpot, 8-12 hours total is about right.
