In the spirit of keepin’ it real, as I usually do, I’m gonna be honest. I don’t have time to write this post – but I still want to share a yummy recipe. It’s holiday time, I’m behind (better than BEING a behind), and Andy keeps chewing on wires. Soooooooooooooooo, you might see that a few posts here and there are a bit sparse – and that’s because I’m busying chasing around a 15 month old who currently likes to play in the toilet while his sister stands by and watches (partners in crime).

So, it is what it is. Here’s a post full of pictures with a recipe at the bottom. This is a great way to fix chicken if you like hot food. Ciao baby!

What’s on that broccoli salad in the background?

  2. This looks positively wonderful!
Have fun chasing those babies! :)

  3. Cheese & chicken a double winner! We love cheese in our house, oh & bacon! Think I might add some crumbled bacon to this! Thanks for sharing. :)

    • I made this with the bacon & added some onions in with the peppers & it was so yummy! This is now in our permanent recipe files! Thanks again.

  4. You don’t have time to write, I don’t have time to read, so…perfect post! 😉

It looks deeeeeelicious! I can’t eat cheese (sniff sniff) and my hubby doesn’t like bell peppers (weird weird), so we have to make leeeeetle changes, but it still looks fabtastic! Thanks for sharing.

  5. I’m having a real dilemma cooking chicken in the crock pot, it always seems to end up dried out and way overcooked. I even went so far as to go buy one of those programmable crock pots and I’m still having the same issue. Is it because the crock pot is not full enough or it is just cooking too long?? I follow the recommended times and usually do the low end of the time. Hope someone can suggest some hints for me to have a better outcome. Thanks !! =)

    • There’s either too little liquid or too long cooked. Add some liquid and keep it on the low end of the time.

  6. Wow!! I am going to make this very soon! I have been looking for more crock pot recipes to save time so that I can focus on other things during the day. This looks amazing and I’m sure it will taste that way, thanks!!

Made this last night and we loved it. We are kind of wimpy about spicy food, and I was worried when I tasted the pepper jack cheese while grating it, but on the chicken it was perfect! Thanks so much.
