
I may not be the crock pot queen like Stacy here, but just reading her blog has given me a newfound love for mine. I even asked (and received) a new, 7-quart slow cooker for Christmas. Yes, I think I am in love!
Lemon Pepper Chicken has been a favorite of my family’s since my husband and I got married. Actually, he taught me how to make it–before he “forgot” how to cook.
I previously baked it in the oven, but it’s even better in the crock pot!
Easy, creamy–and most definitely a comfort food, this simple and delicious meal is sure to please both guests and family alike.
Without further ado, here’s today’s recipe for Easy, Creamy Lemon Pepper Chicken! I hope your family enjoys it as much as ours does!
Creamy Lemon Pepper Chicken
Ingredients
- 3-4 boneless, skinless chicken breasts (either frozen or thawed out is fine)
- 1 recipe cream of chicken soup (equivalent to 1 can*)
- 1/2 cup milk
- 1/2 cup chicken broth
- 2 Tbsp.+ lemon pepper seasoning*
- 4 oz. chopped mushrooms
Method
- Place chicken breasts on the bottom of your slow cooker. I don’t even grease mine, but you might if you are afraid of things sticking. Sprinkle chicken with lemon pepper.
- Mix soup, milk and 2 Tbsp. lemon pepper.
- Add mushrooms to soup mix.
- Pour soup mixture over chicken in the crock pot. Add chicken broth.
- Cook on low for 6 hours or on high for 4 hours.
That’s it! Easy Peasy! I often serve this chicken over rice with a side of green beans or asparagus and some garlic cheese biscuits.
*Notes: Although this recipe calls for cream of chicken soup, like the Myers, our family has been on a journey towards eating healthier. You can use the store-bought stuff in this recipe, but, please, promise you will at least try to make your own. It really is easy, and the store-bought stuff is full of junk. Stacy makes it this way, and this is how I make mine.
I purchase our lemon pepper seasoning in bulk at our local health food store. We LOVE lemon pepper at our house! I encourage you to check the label if you buy it at the grocery store. We previously used lemon pepper with MSG and didn’t even know it! I eventually want to try to make my own!

I want to thank you for the reference to “cream soup” one makes oneself. I am lactose intolerant so can not use the tinned soup & have had a difficult time making a substitute. This recipe will save me some serious headwork – I can use the lactose free milk or another non-milk substitute.

I hope one of the two recipes will work out for you!! I am actually wanting to experiment in making a dairy-free/gluten-free version sometime soon. My daughter is dairy/gluten free. My idea is to try rice milk and rice flour with maybe a little arrowroot or cornstarch to thicken it some more (if needed). I can’t promise that will work, but that’s what’s in my head! Of course, it would be a lot easier just to avoid one allergen or another. I really hope this works for you!

I’m making the “cream soup” recipe today and I can’t think of a better recipe to try it on than Crock Pot Lemon Pepper Chicken. It should be a great Saturday night dinner.

Stacy, I was exhausted today and knew I needed a quick, easy and healthy meal to prepare. This was perfect. I made some subs: DH doesn’t like mushrooms, so I used chopped zucchini and cream of celery. I added chopped onions and a little bit of white wine for flavor. At the end I also added frozen broccoli to get more veggies in the meal. I shredded the chicken and served over a mix of rice and quinoa. My husband rates my meals and this earned a 9.8 out of 10. Yea! Thanks

Just surfed into this lemon pepper recipe, but think I will use it this weekend! But a warning I learned from a dietician about buying lemon pepper:READ the ingredients — for some the first ingredient listed is SALT!!
Yep, that’s what Erin said…I had no idea! I’ll be very careful going forward. I like to make my own seasonings when I can.

Tried this recipe tonight and it was a huge hit! The sauce was a little runny for some reason, but my husband (who’s Greek) had the brilliant idea of turning the leftovers into avgolemono soup. Just shred the remaining chicken and add rice! Yum!
