Crock Pot Beef Stew

Nothing is much more comforting on a rainy or cool day than Beef Stew. Here sharing her recipe is my friend, Mary, from The Encouraging Home. Thanks Mary!

I love beef stew or stew beef…however you say it.  Meat, potatoes, and carrots ~  a comfort food that I love. This is an easy, yummy meal. Sometimes I cook the beef with vegetables, other times I just cook the meat and serve it over noodles or rice.

 

 

 

First, place diced potatoes, carrots, and celery in the crockpot. Add however many that you like.

 

 

 

Add the meat ~ a roast or stew beef cubes.

Next, add dry onion soup mix. You can learn how to make your own homemade onion soup mix that doesn’t contain MSG here.

Add ¼ cup Worchester Sauce. Look for one that doesn’t have high fructose corn syrup.

Add ¼ cup apple cider vinegar. Add salt and pepper.

 

Sometimes I add a can of Cream of Chicken soup to give it a little different taste. Find out how to make your own healthy cream of chicken soup here.

Add water 1 – 2 cups, depending on how soupy you like it.

Cover and cook on high 4-6 hours or low 8-12 hours.

This stew is not very “stewy” …more of a meat and vegetables meal to eat with a fork.

    So sorry, I do not like using Lipton soup mixes or Chicken soup mixes in anything…. :(

      Oops, this is my mistake! :-) If you read the post above, you’ll see that Mary gives the links to homemade Lipton mix (to avoid MSG) and homemade Cream of Chicken Soup (for the same reason). I put the links in the original post, but I forgot to add them to the recipe. Thanks! :-)

    This cracked me up! I have an Amish cookbook and we use a recipe from it every Thanksgiving. It is PA Dutch Potato Filling. It is just like this one – no amounts, just a list of stuff and you decide how much. I am making this today for tomorrow dinner.

    This beef stew sounds wonderful – you’ve used lots of lovely flavours in it. Beef stew really is one of the ultimate comfort foods. I also like the homemade onion soup mix. We can’t get dry onion soup mix here in the UK, so it’s a great recipe for me to have on hand.
